We've been working with The Brinery for most of a decade. This Ann Arbor-based company has brought about a revival in the lacto-fermentation marketplace and the sandwiches at Zingerman's Deli have been benefitting from the flavor improvement since the early days. 

The sauerkraut from The Brinery provides the crunchy, bright, sour character of the Reuben sandwich that melds the soft bread, melty Swiss, savory meat and rich Russian dressing together. It's also great on its own and good for your gut. (That's a big deal these days). 

Made from organically grown cabbage from farms around Ann Arbor. Packaged in easy to open and reseal pouches, ready to enjoy when the mood or sandwich strikes. Store in the fridge. It's a living, perishable food!
